One of our three Olio Nuovo offerings this season, this Spanish varietal grown in California boasts a crisp and smooth mouthfeel, hints of green apple, and a bitter, peppery finish. 

Excellent in pasta or as a dressing for a spinach salad with tomatoes, feta and cured olives.

This is an unfiltered oil and may benefit from some light agitation prior to each use to redistribute the sediment.
