The first press of the season! Enjoy this unfiltered and polyphenol-rich

blend of Arbequina and Favalosa olives while supplies

last. This batch is very fruit-forward, with notes of ripe and green banana, artichoke, and tomato leaf. Most olive oils are allowed to rest for 60-90 days after pressing, during which time the olive sediment settles to the bottom, beforethey're bottled. Olio Nuovo, however, is bottled right away, retaining more nutrients and green, grassy flavor. Due to the exceptionallyperishable nature of this oil, it is recommended that it be consumed within three months of opening and within six months of the harvest date for best flavor. While this is recommended as a finishing oil for its bright, crisp taste, it also handles higher heat wonderfully, so don't shy away from using it for sautéing or frying.
